food styling curriculum

Hi,

I have recently designed graduate courses in restaurant business and gastronomy.
One of the modules is on food styling, and so far it mainly focuses on photography.
Plate presentation is taught much earlier in the undergraduate program, but in so far as plate presentation relates to glossy books and magazine articles, it would be relevant to the course (IMHO).
I was wondering if anyone out there had developed a food styling course, and if so, what did you include ?
