hands-on baking

As a past teacher in adult ed cooking classes, caterer, ass't to well-known NYC baking teacher,
I would like to start my own baking classes from my home kitchen. I do not have a formal baking education--just lots and lots of experience. Are there any legal issues I should be aware of, and, are there any organizations I should join? Any advice would be greatly appreciated. Thanks
