Hi Andreas:
I would recommend you " La Guide Culinaire" or the Escoffier cook book and you will find 100's of consomme recipes.
You have to know the basic recipe for beef, chicken, veal, etc. cosommes. The name will change with the garnish (garniture) you put in
CELESTINE' crepes julienne and chopped parsl;ey
CAROLINE with rice
JARDINIERE with vegetable brunoise
MADRILENE with tomato
