I teach a Minstry of Education program here in Quebec, Canada which is given in a series of 22 modules. We are competency based, with a pass mark of 80%, and opportunities to redo exams or failed modules. I find the program prepares students well for industry and is well designed from a teacher's point of view. If you have specific questions, I would be happy to try to answer them. I have been teaching professional pastry for 8 years.
