If you go through a publisher you will realize almost no profit. And if the book doesn't sell in 2.3 seconds the publisher will not push sales, assuming that you can get a publisher to take on your book. Your best bet is to self publish, that way you retain all of the rights, including electronic. It is costly, but you have total control. Contact the International Assoc. of Culinary Professionals (IACP) (502)-581-9786 and ask for a list of their audio tapes on how to self publish. There is a lot of good information there. They are located in Louisville, KY.

Otherwise go to the library and ask the reference librarian for a book of literary agents. Those that charge for their services are the ones to stay away from.
