looking for broader-based training

I have a dilemma b/c I want the best professional training I can get, but don't want to be a restaurant chef. My goal is to work in a test kitchen for a publisher, for which my graphic design background would be a definite plus, but for which I also need tangible skills training. Are there any programs out there that don't just focus on professional chef-dom, but are great with the basics? Perhaps with food styling, food writing, and other such related topics? (I've done all the basic research on up to 2 year programs, have shaw guides, have started getting info based on my assumption that the best education is at a pro chef school anyway) I'd really appreciate advice! thanks, mara.
