I believe the best thing to do is buy your new knives one or two good pieces at a time. I have recently tried the Henckles twinstar series and the Claim they make about the blade is false yet I love the handel. I suggest the all new Five Star Series by Henckles. A twin star handel and the Four Star blade combined. For startes try the 10" french or better known as the chef knife and get your boning knife first. Proably the two most important in the kitchen. you also need a peering utility. : Beau Jordan, Rolling Hills County Club, COLORADO
