I believe the best thing to do is buy your new knives one or two good pieces at a time. I have recently tried the Henckles twinstar series and the Claim they make about the blade is false yet I love the handel. I suggest the all new Five Star Series by Henckles. A twin star handel and the Four Star blade combined. For startes try the 10" french or better known as the chef knife and get your boning knife first.
