I used to chat with Karen on CIS before she wrote the book, I know quite of few of the people she wrote about in the Boston area, only a couple were chefs but she didn't(wouldn't) know.
Almost all of them are out of business now, I'd prefer to see a book re "staying in business". That book got a lot of kids off to a fast track to noplace.
