As a student of the culinary school last year, I can tell you first hand that the program is fantastic. Dr. Chesser, the head of the school, is a professional to the highest degree. I say this having been in the industry for ten years, currently as the Director of Operations for a high volume Cajun/Creole restaurant in Pensacola. Life in Thibodaux is a little slow, if you have to work while in school, as I do, the pickings are a little slim. But, if you want a top-notch program for a great price, look no further. It's worth the time. My classmates were eager to learn, and being part of a larger university has many advantages.
