I'm not sure school prepares anyone to know how to run a business, I run a business and know little about book keeping, I hire people for those chores. I list street smarts higher on my list with location close behind, lastly adequate capitol.
A long training period under a real chef in a competently managed restaurant is unbeatable assuming you keep your eyes and ears open. I would also make it known what my plans were, I would much rather work with someone who has a tangible goal than someone who's just in love with cooking.

I had a woman working for me who was studying at BU for her masters in business administration, she said her professors couldn't run a peanut stand but could analyze balance sheets every which way. The education is very usefull but not absolutely necessary.
