Find the one or two places that you want to work the most and be a pest. Go back every week keep at it. If there is an opening find out what the position is and read every thing on the subject you can. Don’t just read "the Book" put it into practice buy a chicken and take it home and roast it according to Escoffier. If you can tell the chef that money is not as important as working with him personally. Be sincere but fluff his ego (we all have them).
