Find a good local restaurant, talk to the chef.
Decide which courses at UCLA would enhance your career, dump the underwater basketweaving courses right now.
If you think you can go all the way take some business and accounting, you'll thank me in 15 yrs.
Exec chefs need business training besides the culinary stuff, any fool can cook but to be a top chef you have to be a professional manager (and psychiatrist).
Get a couple of yrs PT experience before going to cul school.
Join ACF, get certified as a chef.
