:Dan, This is not to answer your question, but to ask you one. I am looking into the chef school at Johnson and Wales and would like to have some input. I am 43yr and have always wanted to become a pastry chef and now that I am divorced I have the opportunity to expand my horizons. I will be working in a bakery/coffee shop starting in Jan, making bread, muffins, etc....I will be getting on the job training here...My dream is to someday have my own bed and breakfast/and/or catering business. : Iam a 92 grad.from J and W pastry program,and i am considering switching over to cooking.Idont want to go back to school and spend alot of money.Currently Im in the midwest but will be moving to the Houston area within the next year.Would a 3 year ACF accredited internship under a talented chef be the answer. all help appreciated
