I understand your concerns. A little over a year ago I decided to attend a culinary school here in the Chicago area. For me, it was important that I keep my job while going to school. I could not afford to pay for it if I didn't. Most of the chefs at school suggest quitting your job and going full time to school. However, they are not the ones who need to pay the bills while this transition takes place. I don't suppose there is any one right answer. If you can afford to make a clean break, go for it. If not you do what you can. As for your question as to who is a chef and who is a cook. There seems to be a lot of grey area around that title. The title of chef is one that has a lot to do with respect as well as the accomplishments of the individual.
