:Karlo: This reply is late, but for what its worth, a chef acquaintance recommended El Centro as being the better of the few schools in Dallas. Are there any other Dallasites out there who have any experience or knowledge of educational opportunities in Dallas? P.S. Sorry for the misfire on the first posting.
