I have heard good things about the School in Santa Monica. Have you checked out Raymond Hoffmiesters School in Tarzana?
As has been posted here many times maybe not in these words "Get as much experience as you can before you decide on a school."
Saying you'll work for little or nothing will go a long way but the best way is to make yourself a pest.
Find the one or two places that you want to work the most and be a pest. Go back every week keep at it. If there is an opening find out what the position is and read every thing on the subject you can. Don’t just read "the Book" ‘Escoffier’s Cook Book’ put it into practice buy a chicken and take it home and roast it according to Escoffier. If you can, tell the chef that money is not as important as working with him personally. Be sincere but fluff his ego (we all have them).
One other Resource that you might check into, there is a very strong ACFjuinior chapter in L.A.
