You were doing great until you got to Julia Childs, she's not a chef period, she's a TV personality who did clumsy cooking shows.

I think you have your finger on it re' the schools, no need or time at your age ,with your experience, to go extended culinary.
Some of the more successful , innovative newcomers are people who fit your profile to a T.
If you don't go for it now you'll kick yourself later, you can always go back to Corp America if it doesn't work out but I think it will.
People who come here and lay it all out have usually already reached their conclusions, so many take the plunge before thinking it through and end up as confused as they were when they started...except minus a small fortune.

I started at 3am today, just got through at 5pm, its more fun than working 9-5 or I wouldn't do it.

Feed others, feed your soul.
