It depends where you are in Belgium. I spent a few weeks at a good cooking school in Mons last May and I know of an excellent school in Bruges and Brussels.But the cuisine is SUPER CLASSICAL.
Also, from what I saw there, cooking schools in Belgium start very young (many start at 12 years of age) and continue until graduation. There were very few students over 18. On top of that, they spend half their time cooking and the other half doing table service! They all do both in government schools. Have you noticed how great the service is in restaurants in Belgium? Now you know why.
And by the way, in the hotel school I visited, the teachers were really vicious to the students. It is super strict over there.
I didn't see any cooking schools for students who were out of high school. But there could be exceptions in other areas.
