Its not the path thats the problem, its the capital.
Working in the food trade since age of 16 should have given you a good deal of skill , or at least experience.
I wish I'd had some bookeeping experience before I stumbled into a business , but I had to learn that later.

I guess that beats going into business first then taking cooking classes ( as a lot do...and it shows).
Be sure to list your intention to open your own business on your resume, it shows you're serious and have the confidence to make it happen.
