If you enjoy working about 14 hours a day, 6 and sometimes 7 days a week, treated like a piece of crap and get paid peanuts, then go for it. Talk to just about any frenchman about North American chefs or cooks and they won't have anything nice to say. Talk about our food and to them it's all crap. Then ask them , why don't you go back to france.. Guaranteed you'll want to back-hand him/her.

We've had many French cooks and North American's trained in France go through our kitchen and that's exactly what they did. In through the front door and threw straight out the back. They re not any more talented than us. Most of them less talented. Some of them had such big heads, we had trouble getting them out the door, but seriously, you can get great training here and earn alot more money also. Know unless you're one of those kids with rich parents ,who sent you to one of those VERY EXPENSIVE schools in the US and still graduate useless in a kitchen. But that doesn't matter because your parents will probably buy you a restaurant, pay for loads of advertisment ( usually false) , but that doesn't matter because your restaurant will be full anyways. We've had a few of those, but that's a whole other topic...

Where in Canada are you presently working?
