Go with the apprenticeship,but get some education also.
You need to learn under pressure conditions, not classrooms, class is for studying the business, health, chemistry aspects.
If a chef wants you to apprentice consider yourself lucky or talented.
Ignore the magazines that promote celebrity chefs who graduate from school then open famous restaurants.
