Gerard, if I could move to Boston right now I would take you up
on your offer! I would love to find someone here in the Midwest
willing to take on an apprentice...but without the formality.
I know what I want, I want to open a small, high quality
restaurant or pub but I have no intention of coughing up culinary
school tuition...after all I have no intention of becoming
a five star chef. I would like to find an experienced
restaurateur who would be willing to let me "work" in every aspect
of his business until I absorb all the information I can to help
me in my venture. I don't need a paying job here, just someone who
will let me get my paws into the business at my own pace (and I
am a quick learner)So...am I looking for something that does not
exist or have I just been looking in the wrong places?
