Have you considered a partner, someone with know how.?
Its not the best way but sometimes its the only way.
I think you have to focus more on exactly what you want,
a small high quality restaurant vs a pub, they are different
animals.
It might take at least several yrs to prepare yourself to succeed
in a restaurant, but you could buy a pub tomorrow and make big
bucks.
A LOT depends on what type of food, fancy cuisine or meat and potato's ?

You might be rushing yourself a bit too, take your time, allow a couple of years.
Do you know how much everything in the kitchen costs? foodwise and equipment?
You should.
Go to restaurant auctions, closures, bankrupcy auctions.
You'd be surprised at the connections you make at these auctions.
