I don't have much info on the Art Institute in Houston, but I do know that it is accredited by the ACFEI - the American Culinary Federations Educational Institute. According to the ACF's listing of accredited schools, such accreditation "...requires that curriculum, faculty, resources, support staff, and organizational structure all substantially meet the standards set by the Accrediting Commission. These standards were set by industry leaders in both the culinary art and culinary arts education."

By the way, I am an accountant...soon to be a cook. I attend culinary school in the Washington D.C. - area.
