:CIA has excellent school in hyde park,also french culinary NYC,Peter gumps cooking school with nick malgerie NYC. Also sullivan college in kentucky has two master pastry instructors.
:Hands on is always a good start. read,read read pastry books
:try starting in bakery the above schools are expensive but good
