I did neglect to mention in my previous response my decision-making process. I took a baking 101 course to get in there and get my feet wet. Taking this class was a great litmus test for me -- it reaffirmed that I indeed loved baking and made my decision to leave a job I very much disliked a little bit easier. Prior to taking that class, I conducted a lot of research about the industry. I visited local culinary schools, spoke with people in the industry, and read, read, read as much as I could about the industry. For me, this approach worked. I agree with Gerard that it might be a good idea for you to take some classes before you jump in head first and commit.

This isn't a decision that should be taken lightly. In my opinion, you should get out there and do some legwork in the area you're interested, take a class or two, and maybe that will lead you in the right direction. You won't know until you try. If this is something you're truly interested in and are passionate about, a little sacrifice (like eventually quitting your job and giving up some good benefits)won't seem so tough.
