What information is there about the school. I mailed away for some, however the bulk of it was for weekend classes,etc. I didn't get many hard facts about the professional curiculm. I too am non-schooled veteran of the business, with both classic and modern styles(floribean). However, my true desires is to cook upscale vegetarian(no hummous or tabholi). Any insight?
