I am currently attending the Chef John Folse Culinary Institute at NSU and honestly, I wouldn't recommend the program to anyone -- at least, not right now. It's too new; even after three years in existence, they still don't have it quite together yet. Degree requirements have changed at least twice during this semester alone. The instructors are very knowledgeable, but not exactly the best at teaching. Lab kitchens are large and modern, and class sizes are adequate for one-on-one learning...provided nobody else enrolls anytime soon. Of course, there's some plans floating around to build an actual culinary building (right now we're in a corner of the Life Sciences & Technology building), but it doesn't look like anything is going to get done in quite awhile. Don't get me wrong, JFCI has the POTENTIAL of being a great institution, and if you don't mind putting up with low-quality for the time being, hey, go for it. Personally I wish I could have waited until everyone got their act together; my experience hasn't exactly been the best. But don't listen to me. Ask around, find out more about the JFCI (visiting the place would be very helpful), and then decide whether or not it's right for you.
