Prep work (with the understanding of moving up as yourskills improve) is infinitely better than anything available in a chain restaurant unless you are merely looking for a job as opposed to a career..A great chef would be proud to have spent two years prepping for a another great chef rather than having been the head line cook at a chain where all the decisions are made 1000 miles away.
