I would imagine culinary school and a few internships would be necessary just to get someone in the front door. I say this b/c there is no way someone would hire me at this point simply b/c in today's marketplace, most employers ask or demand someone that already has experience b/c they are not willing to devote time to training someone.

most people applying want to make a decent paycheck right off. I usually hear " I have to make at least X dollars a week" , this means the employer has to be able to to generate XXXXX from that persons efforts in order to pay them, in this case the employee with little or no experience has sunk their own boat.
if you walked in and said "I'll work for free until I'm of use " ........... in like flynn.
Consider the cost in going to culinary school before reasoning you'd have to make X amount because XXXXX will be going to the school. If its completely out of the question due to your previous eductation which is not paid for yet then thats the hole you dug and you're in a trickier position. Getting out of the hole is hard if you keep digging it deeper.
Paying for a white collar education with a blue collar entry level yob isn't going to fly very soon .

If you're in a noplace position with GTE thats not because your not in the food biz, you have to get those Ed bills paid .
If you can't make it pay its way then get a second and third job, I work well over 120 hrs a week and I'm no kid but I pay my way.
At $7 hr thats $840 gross, plenty enough to pay off those old bills. If this sounds excessive..... those kind of hrs will be what might be doing on a regular basis so be forewarned what you're getting into.
You might think 'yeh but I'd enjoy being in the culinary arts field', but getting satisfaction from your efforts isn't contingent on the type of work you do. Its how you do it, no matter what it is, it all begins inside.
Get your ducks in a row so you can pop them off in proper order.
