Hi. I am producing a line of gluten-free baking mixes, and am looking for gluten replacers. I have people with an allergy to corn that cannot have xantham gum, and guar gum is not acceptable because of the problems with stomach irritation. I have heard of ground flaxseed used, but it really hasnt worked well in my tests. Does anyone know of other gluten replacers? Any help would be great. Also, I am looking for a supplier of white spelt flour. Thanks a lot.
