Can't help you in extending the life of a cookie that has already been baked but maybe these other suggestions may help. We make a huge batch of cookie dough, then portion them into 1.5# portions, chill the dough, then roll them the width of sheetpan (23"?) and roll in parchment, label, and freeze. Then when you need to bake off, just unroll the parchment, reuse, cut dough into 1" thickness and you should yield 24 cookies. We have on hand 7 or 8 different cookies in freezer whenever we want it. It comes in handy, hope it helped. Heather: What can I use in my cookies to extend their shelf life?
