Hi Matt,

a couple of things, first you need to chill the muffin batter.
Fresh mixed batter would go all over the oven (melt) if scooped at room temp.
second thing is you're not filling them enough. 2/3 will produce a cupcake shape.
We fill ours more than full with chilled batter/frozen fruit sprinkle tops with fruitfine granulated sugar and we bake them at 350.
I see this problem time after time.
