RED VELVET CAKE
Cake
1.5 cups of sugar
2 eggs
2.5 cups of plain flour
1.5 cups oil
1 cup buttermilk
1 tsp vanilla flavouring
1 tsp bicarb of soda
1 tsp vinegar
1 5/8 oz bottle of red food colouring (cochineal)
ICING
1 lb icing sugar
4 oz butter
8 oz cream cheese
crushed nuts (pecans)
Beat eggs. Add sugar, oil and vinegar. Sieve flour and soda together.
Add flour to mixture. add milk slowly. Add flavouring and cake colouring.
bake 25 mins at 350 oF or 180 oC or until it looks done in two round nine inch pans.
Soften cream cheese and butter together and whip with sugar.
Cut each cake in half (4 bits) and layer together with icing spread rest round outside.
and coat with nuts
