I'm a baker and it's called an italian rainbow cookies,8oz almond paste,3 sticks butter,1 cup sugar,4 egg yolks,1tsp almond extract,2 cups flour,2 jars apricot preserves,mix butter, sugar,almond paste,almond extract,flour,well with fork,beat egg yolks seperately and fold in,divide dough into 3 equal portions,add 10 drops red to one piece of dough,10 drops yellow to other,12 drops green to the third piece,spread dough into 3 seperate pans 9x13,bake 350 for 15 mins,cool,spread apricot between layers in a stack ,press and refridg over nite,spread simi sweet choc over top,melted of coarse,cut into squares good luck its great not just for the holidays,let me know if this is what your looking for
