You might try asking the restaurant if they would share there receipe with you.
If not then take your basic flan receipe, place the raw coconut into the dish you wish to use, then add your caramel.
Which should toast the coconut a bit, due to the fat content in the coconut.
After the caramel sets add the custard. Good luck.
