I'm a baker of sourdough hearth breads whose friends and customers clamor once a year for soft dinner rolls. And all of a sudden, here we are at Thanksgiving.
Can anyone elucidate me on the story behind, and the proper shaping of, the "Parker House Roll"? I have it in my mind as the paragon of buttery, yeasty, glossy soft rolls, but I don't know where the image comes from and can't visualize the shaping instructions I've read. Any help--especially a reliable formula and clear rolling instructions--will be really appreciated.
