I don't think so, it takes years so its better to spend years rather than quick tracking.
If you can find the right position and I would try that first , then take some courses so you'll actually understand whats being done.
Allow at least 5 yrs with or without school.
The net is full of pastry chefs looking for people like yourself.
The recent issue of pastry art and design rated attitude as most important criteria, placing it well above culinary degree.
The 2 assistants I hired don't have culinary degrees.
