: I am looking for info (history, recipes, etc.) on flatbreads, espically Indian Naan bread. I'd appreciate URLs that point me in the right direction.

Here are some facts on Indian Naan Bread that I've gathered during the course of my study about the different breads of the world:

Naans are the best known example of the leavened flatbreads found in India.
They are commonly found in the north of India, especially in the Punjab, as
well as in Pakistan and Bangladesh.
The naan is traditionally cooked in a tandoor, a clay oven dug into the earth.
Its secret lies in the yoghurt added to a highly fermented, very fine wheat flour,
which is responsible for its smooth, soft crust and its slightly sour taste.

Are you a professional or home baker?
Let me know so that I can send you the recipe fashioned after your interest, meaning
I can give you a recipe in cups (for homebakers) or in baker's percent (professional)

Hope these facts help you!
Happy baking!
