Here is the recipe I have used for years. It is a family favorite.

Red Velvet Cake

Amount Measure Ingredient -- Preparation Method

------------ CAKE -------------
1/2 cup unsalted butter
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla
3 tablespoons red food coloring
3 tablespoons cocoa
2 1/2 cups sifted cake flour
1 cup buttermilk
1 teaspoon salt
1 tablespoon vinegar
1 teaspoon soda
------------ FROSTING ----------
1/2 cup flour
2 cups milk
2 cups butter (or 1/2 shortening i.e Crisco)
2 cups sugar
4 teaspoons vanilla

Cake:
Cream butter, sugar, eggs, vanilla. Make a paste of cocoa and food coloring; add to first mixture. Alternately add flour and buttermilk in four additions. Mix soda and vinegar in small bowl; add to batter. Blend. Bake in 3 9-inch pans (about 1 3/4 cups batter in each) for 20-25 minutes at 350 degrees. Let cool completely. Cover with frosting.
Frosting:
Blend flour and milk in a blender, pour into a saucepan and cook until thick, stirring constantly. Pour into samll bowl and let cool. In large bowl of electric mixer cream butter (can use 1/2 shortening) and sugar very well. Force cooled, cooked milk and flour mixture through a wire strainer and combine with creamed butter and sugar. Add vanilla and beat until sugar is completely dissolved and no longer grainy to the touch.
Fill and frost cake; reserve some frosting to pipe borders and decorate.
