What type of flowers?

I need to make rubrum lillies and roses for my neice's wedding cake. Would it be best to make them out of rolled fondant, rolled buttercream or gumpaste? I want them edible and would like to make them about three weeks
ahead of time (prefer drying instead of freezing). Any comments would be appreciated.
