Better to brush with egg whites (thinned with water 50-50)toss in sugar and bake, the sugar should stick like that.

Better still use water icing, water + XXXXX sugar to thin mud consistency, bake the pretzel remove when just about done and brush with the water icing then put back in oven for a couple of minutes. The icing will actually boil , bubble up and blister.
When removed and cooled the icing will crystalize into a crusty coating which won't fall off and looks neat.

try with premade pretzels first, be sure they are hot before the icing goes on. Like this you don't have to adjust your basic pretzel recipe,no xtra sugar needed.
