There's some bakers percentage yield formula, and most bakers scale out their cake batters, but I'm assuming you're using a home cook's cake recipe, which is just another excuse for me to use algebra and geometry.

Calculate the volume of your sheet pan (if 18 x 24 x 1, it's 432 cu. in.) The volume of your 10" cake pan, if 2" high, is 157 cu. in.

volume of sheet pan, divided by volume of round pan = multiplier

432 / 157 = 2.75 +/-

So multiply your recipe by 2.75
