Hello, I've been making cakes for a few years now. I am just getting into wedding cakes. I've done 5 so far, but only with buttercream icing. I have a couple who wants a 3-tiered cake for the 4th of July and they both hate buttercream icing. Can you recommend a lighter (or less sweet) icing that will hold the tiers up and not melt during transport?
(I also want to make my own wedding cake {for Sept. 26th} But my family are dead set against it. They think that I will be too preoccupied with everything else. They're probably right, but I haven't made up my mind yet....)
