Did you ever think to just ask them? say you have certain allergies, they kinda have to say.
Theres no telling what they use, could be vanilla and alm ext or pistaccio ext/liquer and so on.
Are you using ricotta?
There are 3 or 4 classic versions, some use zabaglione as a base.
