Hello!

I'm working on a "state of the industry" article for Pastry Art & Design Magazine, and am looking to interview 20 pastry
chefs and F&B managers--10 from restaurants, and 10 from hotels. I need a mix of medium to large-sized hotels and
restaurants and varied locations. The article will be a mix of statistics, short quotes and a few longer essays by leaders in the
industry (which I'll ghostwrite). For the interview I'll be asking questions about both the individual and the business, such
as: Sales in 1997; salaries for various tiers of employees; new hires over the past 3 years; your education; what's hot and not
in your industry; your best-selling items.
