I've been there!! We charge an 18% s.c. on food & bar set ups, not on rentals or staff. We explain to the client that this charge is for "bringing the restaurant to the site"
Make a deal with your rental co. in getting a lower price. Or just tell the client that the 15% s.c. is for the set up & breakdown of the rental equip.
