Transform the Tenderloin to carved Wellington. You can leave out the goose liver. Have one as a show piece and carve it towards the end. With Bernaise very impressive. You could have a sautee station for the chicken doing stir fry or fajita type stuff with vegetables. Or do buffet line with 2 or 3 types of chiken entrees and accent the line with silver livery, trays and candelabras.
