I have the opposite experience. My students, and especially the private
groups I teach, more often than not become my clients. I agree with you
about the amount of work, but you only have to write a class once and
then it is always "in the can" so to speak. Hands on classes are the
easiest because as instructor you walk around and "consult" on the dish
being prepared. And the students are eager to do the clean up (Bonus!).

Nice to hear from you, Phil. I am doing a buffet and caterings class at
the vo-tech just down the road from you. The students are interested in
seeing your facility.
